Egg	75%	750 g
Water approx.	15%	150 g

Working method
Mixing	Mix all ingredients into a well developed Batter in a Hobart type machine: mix 1 minute at slow speed and 8 minutes fast speed
Scale	Approx. 400 grams in 28 cm. round tin
Baking	Approx. 27 minutes at 180ºC
