Emulsions are an excellent solution as release agent / depanning agent for bread and specific sponge products. Emulsions offer many practical advantages. Because they are white it is possible to see directly which parts of the baking material are covered.
Emulsions are thicker than products that only contain oil. Emulsions can therefore be used with airmix dosing systems, without loss of product due to spraying. Only the baking trays or tins are greased, not the surrounding area. Emulsions are based on water and vegetable oils and waxes.
