Ingredients

Wholemeal flour 25% 2500 g
Flour 25% 2500 g
Sonfit Omega 50% 5000 g
Fresh yeast 2,2% 220 g
Water ca. 55% 5500 g
Working method
Kneading Mix all ingredients into a well developed dough.
Dough temperature Ca. 26ºC.
Scale Ca. 600-700 grams.
Intermediair proof Ca. 35 minutes.
Moulding Mould into loafs.
Final proof Ca. 65 minutes, cut in before baking.
Baking Ca. 35 minutes at 225ºC.
