| Kneading | Mix all ingredients together until the dough is well developed. |
| Dough temperature | Approx. 24ºC. |
| Bulk proof | Approx. 20 minutes. |
| Scale | Approx. 500 grams and lightly round. |
| Intermediair proof | Approx. 5 minutes. |
| Moulding | Gently in a pointy shape, than put between cloth. |
| Final proof | Approx. 80 minutes bake up site down on the oven floor. |
| Baking | Approx. 35 minutes at 240ºC, with steam. |
