Flour 50 % 5000 g
Vitason Licht Meergranen (multigrain light) 50% » 50 % 5000 g
Fresh yeast 2,5 % 250 g
Water ca. 55 % 5500 g
Working method
Kneading Mix all ingredients into a well developed dough.
Dough temperature Ca. 26-28ºC
Scale Ca. 455 gram.
Intermediair proof Ca. 10-15 minutes.
Moulding Mould into loafs.
Decorating With a mix of maize grits and sesame seed (50:50)
Final proof Ca. 75 minutes.
Baking Ca. 35 minutes at 230ºC, with steam.
Baking in rotation oven Ca. 30 minutes at 230ºC, with steam.
