Ingredients

Flour 100% 10000 g
Salt 2% 200 g
Yeast (dry) 2-2.5% 200-250 g
Sonplus Spray » 3% 300 g
Crumb Soft » 1.5% 150 g
Sonplus Toast New » 0.5% 50 g
Sugar 10% 1000 g
Water approx. 50% 5000 g
Working method
Mixing Mix all the ingredients into a smooth and well developed dough
Scale Approx. 1700 grams (30 pieces) and round them
Intermediair proof Approx. 10 minutes
Moulding Dividing and rounding. After decorating, put the dough pieces on a baking tray. Press the pieces after 10 minutes
Final proof Approx. 90-100 minutes
Baking Approx. 8 minutes at 240ºC, no steam
