Crumb Soft » 0.75% 75 g
Sonplus Toast New » 0.35% 35 g
Sugar 4% 400 g
Water approx. 55% 5500 g
Working method
Mixing Knead the dough in a spiral mixing machine. Slow for 2 minutes. Fast for 6 minutes
Dough temperature Approx. 27ºC
Scale Directly after kneading approx. 800 grams
Intermediair proof Approx. 5-10 minutes
Moulding Mould as tin bread
Final proof Approx. 70-80 minutes
Baking Approx. 30 minutes at 230ºC
