CreationS Malted Wheat is a premix for preparing light brown bread.

CreationS Malted Wheat is suitable for various loaves and rolls. It combines well with CreationS Maize and CreationS Cheese. The doughs have a good extensibility, are dry and easy to process (both in traditional and industrial processes) and are very tolerant.

CreationS Malted Wheat provides a generous oven spring. Your end products will have a light brown crumb colour and a full flavour thanks to the hig proportion of malted wheat flakes. The higher the dose, the more flavour in the end product, without significant change in the crumb colour. The higher the dose of CreationS Malted Wheat, the softer the bread.

CreationS premixes allow for flexible dosing between 10 and 40%. A dose of 25% is dosed with 75% flour. A simple calculation: % CreationS + % flour = 100%.

By varying the dose, bread characteristics can be influenced: 10% CreationS results in a value for money product, 25% CreationS results in a soft and tasteful bread and 40% CreationS results in a premium bread with a premium softness.

CreationS premixes do not contain salt and bread improver. Our advice for adding a Sonneveld bread improver is 0.5% Sonplus Univers (PL), 1% Sonplus Krokant Extra or 0.3-0.5% Proson Uni-force Royal.
