Vitason Spelt » 100% 10000 g
Butter 10% 1000 g
QS Zacht Luxe (Luxury Soft Rolls) » 5% 500 g
Egg 5% 500 g
Fresh Yeast 3% 300 g
Water approx. 35% 3500 g
Working method
Kneading Mix all ingredients into a smooth and well developed dough at slow speed for 10 minutes
Dough temperature Approx. 24ºC
Scale Approx. 1800 grams for a baking sheet 60 by 80 cm
Processing Roll the dough pieces into slices with a thickness of approx. 2.5 mm. Place the slice on baking slide covered with baking paper and prick little holes in the dough with (for example) a fork
Cutting Approx. 12 by 6 cm
Decorating Make the dough wet and sprinkle with spelt flakes
Final proof Approx. 35 minutes
Baking Approx. 30 minutes in an oven decreasing from 190ºC. Open the steam valve after approx. 25 minutes
