Flour 50% 5000 g
Vitason Licht Meergranen (multigrain light) 50% » 50% 5000 g
Fresh Yeast 4% 400 g
Sonplus Krokant Extra (Crispy) » 3% 300 g
Water approx. 55% 5500 g
Working method
Kneading Mix all ingredients in to a smooth and well developed dough
Dough temperature Approx. 26ºC
Scale Approx. 1650 gram (30 pieces)
Dough proof Approx. 10 minutes
Dividing Divide and round up. Place the dough pieces on baking sheets
Final proof Approx. 60 minutes
Decorating Just before baking incise each dough piece twice
Baking Approx. 18 minutes at 240ºC with steam
