Dark Multigrain Bloomer - Vitason Donker Meergranen (multigrain dark)

Ingredients

  • 5000 g - 50% Flour
  • 5000 g - 50% Vitason Donker Meergranen (multigrain dark) 50%
  • 5500 g - 55% Water approx.

Decoration:

  • 1000 g - 10% Sunflower Seeds

Working method

  • Mix all ingredients into a smooth and well developed dough
  • Dough temperature: approx. 26ºC
  • Scale: Dough pieces approx. 450 grams and rounding
  • Dough proof: Approx. 35 minutes
  • Mould as a short loaf Decorate with Sunflower Seeds and place the dough pieces on an with rice flour prepared inserter or baking sheets
  • Incide just before baking as desired
  • Final proof: Approx. 65 minutes
  • Baking: Approx. 35 minutes at 230ºC with steam
| Creations premixes are to be dosed between 10% and 40%. The higher the dose, the more tender the bread, the richer the filling and the darker the crumb color
