Basic Premix DM » 25% 2500 g
Salt 1.5% 150 g
Fresh Yeast 2.5% 250 g
Sonplus Grof Volkoren (Wholemeal) » 8% 800 g
Sunflower seeds 15% 1500 g
Water Approx. 63% 6300 g
Sunflower seeds 10% 1000 g
Working method
Mixing Mix all ingredients in to a well developed dough
Dough temperature Approx. 27ºC
Scale Dough pieces approx. 815 grams and rounding
Dough proof Approx. 35 minutes
Moulding Mould as a long loaf Decorate with Sunflower Seeds and place the dough pieces into baking tins
Final proof Approx. 65 minutes
Processing Place the lids on the baking tins
Baking Approx. 40 minutes at 235ºC
