Vitason Méditerranée 50% » 50 % 5000 g
Fresh Yeast 2,5 % 250 g
Water approx. 57 % 5700 g
Working method
Kneading Knead all ingredients into a smooth and well developed dough
Dough temperature Approx. 27ºC
Scale Dough pieces approx. 900 gram and rounding
Dough proof Approx. 40 minutes
Moulding Mould as a long loaf. Place the dough pieces into casino baking tins
Final proof Approx. 65 minutes
Baking Just before baking cover the tin. Approx. 30-35 minutes at 230ºC
Extra information
Remarks If necesarry add savory filling such as olives, dried tomato, mozzarella, etc
