Basic Donker Meergranen 35% (multigrain dark) » 35% 3500 g
Fresh Yeast 2.5% 250 g
Water approx. 56% 5600 g
Decoration:
Multigrain Mix 5% 500 g
Working method
Kneading Mix all ingredients into a smooth and well developed dough
Dough temperature Approx. 26ºC
Scale Dough pieces approx. 450 gram and rounding
Dough proof Approx. 40 minutes
Moulding Mould as a short loaf. Decorate with Multigrain Mix and place the dough pieces on a with rice flour prepared inserter or baking sheets
Final proof Approx. 65 minutes
Decorating Incise as required just before baking
Baking Approx. 35 minutes at 230ºC with steam
