Multigrain Loaf Dark Malt (10%)


Wholemeal 50% 5000 g
Flour 40% 4000 g
Creations Dark Malt 10% 1000 g
Proson Bruin Prestige (brown) » 3% 300 g
Yeast 2.5% 250 g
Salt 1.5% 150 g
Water approx. 56% 5600 g
Rye flour 3% 300 g
Working method
Kneading Mix all ingredients into a smooth and well developed dough
Dough temperature Approx. 27ºC
Scale Dough pieces approx. 895 gram and rounding
Dough proof Approx. 40 minutes
Moulding Mould as a long loaf. Place the dough pieces on a with rice flour prepared inserter or baking sheets
Final proof Approx. 75 minutes
Decorating Just before baking sprinkle with rye flour and incise as required
Baking Approx. 40 minutes at 240ºC with a little steam
Extra information
Variations CreationS premixes are to be dosed between 10% and 40%. The higher the dose, the more tender the bread, the richer the filling and the darker crumb colour.
