Working method
Mixing Mix all ingredients into a smooth and wel developed dough
Dough temperature Approx. 27ºC
Bulk proof Approx. 15 minutes
Scale Dough pieces approx. 500 grams and rounding
Dough proof Approx. 20 minutes
Moulding Mould as a bloomer Place the dough pieces on with rice flower prepared inserter or baking sheets
Final proof Approx. 60 minutes
Decorating Sprinkle just before baking with rye flour en incise as desired
Baking Approx. 35 minutes at 230ºC
