Water approx. 55% 5500 g
Working method
Mixing Mix all ingredients into a smooth and well developed dough
Dough temperature Approx. 27ºC
Scale Dough pieces approx. 800 grams and rounding
Dough proof Approx. 5-10 minutes
Moulding Mould as a long loaf Place the dough pieces into baking tinstin bread
Final proof Approx. 70-80 minutes
Baking Approx. 30 minutes at 230ºC
