Water approx. 56% 5600 g
Working method
Kneading Mix all ingredients into a smooth and well developed dough
Dough temperature Approx. 26°C
Bulk proof Approx. 15 minutes
Scale Dough pieces approx. 600 grams
Moulding Mould loosly as a round loaf Decorate with a mixture of sesame seeds and Vitason Volfit and place the dough pieces on with rice flour prepared inserter
Baking Approx. 50 minutes at 220°C with steam Open steam slide in time
