Water approx. 55% 5500 g
Préparation
Kneading Mix all ingredients into a well developed dough.
Dough temperature Approx. 27ºC.
Scale Approx. 900 grams.
Intermediair proof Approx. 15 min.
Moulding As bloomer.
Final proof Approx. 60 min.
Decorating With flour.
Cutting Like on the photo.
Baking Approx. 30 min. at 220-230ºC.
