300g - 3%Sonplus Bruin (Brown)
150g - 1.5%Salt
5600g - 56%Water approx.
Filling:
750g - 7.5%Sesame seeds
750g - 7.5%Linseed
500g - 5%Pumpkin seeds
Working method
Mix all the ingredients into a smooth and developed dough After kneading directly mix filling in
Dough temperature: approx. 27ºC
Scale: Dough pieces approx. 895 grams and rounding
Dough proof: Approx. 40 minutes
Mould as a long loaf. Place the dough pieces into baking tins
Final proof: Approx. 70 minutes
Baking: approx. 40 minutes at 240ºC with a bit steam
