Working method
Mix all ingredients into a smooth and well developed dough
Dough temperature: approx. 26ºC
Scale: Dough pieces approx. 850 grams and rounding
Dough proof: Approx. 40 minutes
Mould as a long loaf Decorate with a mixture of mais grids and poppy seeds and place the dough pieces into baking tins
Incise just before baking if desired
Final proof: Approx. 70 minutes
Baking: Approx. 40 minutes at 230ºC with steam

| Mini sandwiches: weigh about 900 grams for 30 pieces. Bake 18 minutes instead of 20 minutes
