Working method
Knead all ingredients into a smooth and well developed dough
Dough temperature: approx. 27ºC
Scale: Dough pieces approx. 900 gram and rounding
Dough proof: Approx. 40 minutes
Final proof: Approx. 65 minutes
Just before baking cover the tin. Approx. 30-35 minutes at 230ºC
Mould as a long loaf. Place the dough pieces into casino baking tins
Notes
If necesarry add savory filling such as olives, dried tomato, mozzarella, etc
