Knead all ingredients into a smooth and well developed dough
Dough temperature: approx. 26ºC
Scale: approx. 930 grams and rounding
Dough proof: Approx. 50 minutes
Mould as a long loaf and divide the dough pill into four equal pieces. Turn each piece a quarter and lay them against each other in a casino baking tin (four pieces)
Final proof: Approx. 60 minutes
Insert at 260ºC and bake approx. 30 minutes at 230ºC
