White Toast Bread based on the SonPlus Softsilk

Ingredients

  • 10.000 g - 100% Flour
  • 5.400 g - 54% Water
  • 500 g - 5% Sugar
  • 150 g - 1,5% Salt
  • 100 g - 1% Yeast dry
  • 50 - 100 g - 0,5-1,0% SONPLUS SOFT SILK 0.5%

Working method

  • Knead all ingredients into a smooth and well developed dough.
  • Dough temperature: approx. 26°C.
  • Dough pieces approx. 800 grams and rounding.
  • Dough proof max 10 - 15 minutes.
  • Mould into a long shape and place in baking tins.
  • Final proof approx. 70 minutes.
  • Bake approx. 25/30 minutes at 210ºC.
