White Toast Bread (Sonplus Softsilk)
White Toast Bread based on the SonPlus Softsilk
- 10.000 g - 100% Flour
- 5.400 g - 54% Water
- 500 g - 5% Sugar
- 150 g - 1,5% Salt
- 100 g - 1% Yeast dry
- 50 - 100 g - 0,5-1,0% SONPLUS SOFT SILK 0.5%
Knead all ingredients into a smooth and well developed dough.
Dough temperature: approx. 26°C.
Dough pieces approx. 800 grams and rounding.
Dough proof max 10 - 15 minutes.
Mould into a long shape and place in baking tins.
Final proof approx. 70 minutes.
Bake approx. 25/30 minutes at 210ºC.
