Mix all ingredients into a smooth and wel developed dough
Dough temperature: approx. 27ºC
Bulk proof: Approx. 15 minutes
Scale: Dough pieces approx. 500 grams and rounding
Dough proof: Approx. 20 minutes
Mould as a bloomer Place the dough pieces on with rice flower prepared inserter or baking sheets
Final proof: Approx. 60 minutes
Sprinkle just before baking with rye flour en incise as desired
Baking: Approx. 35 minutes at 230ºC
