Ingredients

  • 8000 g - 80% Flour
  • 2000 g - 20% VitaSon Rustikal 20%
  • 300 g - 3% Fresh Yeast
  • 5700 g - 57% Water approx.

Decoration:

  • Rye Flour

Working method

  • Mix all ingredients into a smooth and wel developed dough
  • Dough temperature: approx. 27ºC
  • Bulk proof: Approx. 15 minutes
  • Scale: Dough pieces approx. 500 grams and rounding
  • Dough proof: Approx. 20 minutes
  • Mould as a bloomer Place the dough pieces on with rice flower prepared inserter or baking sheets
  • Final proof: Approx. 60 minutes
  • Sprinkle just before baking with rye flour en incise as desired
  • Baking: Approx. 35 minutes at 230ºC
