- 2000 g - 20% VitaSon Rustikal 20%
- 300 g - 3% Fresh Yeast
- 5700 g - 57% Water approx.

Working method
- Mix all ingredients into a smooth and wel developed dough
- Dough temperature: approx. 27ºC
- Bulk proof: Approx. 15 minutes
- Scale: Dough pieces approx. 500 grams and rounding
- Dough proof: Approx. 20 minutes
- Mould as a bloomer Place the dough pieces on with rice flower prepared inserter or baking sheets
- Final proof: Approx. 60 minutes
- Sprinkle just before baking with rye flour en incise as desired
- Baking: Approx. 35 minutes at 230ºC
