Ingredients

  • 10.000 g - 100% Flour
  • 500 g - 5% Fresh Yeast
  • 400 g - 4% FermenSon Prestige
  • 300 g - 3% Sugar
  • 200 g - 2% Gluten powder
  • 100 g - 1% Full milkpowder
  • 100 g - 1% Sonextra Shortening CL
  • 95 g - 0,95% Salt
  • 5.500 g - 55% Water approx.

Working method

  • Knead all ingredients into a smooth and well developed dough.
  • Dough temperature: approx. 27°C.
  • Scale: approx. 1.650 grams (30 pieces) and rounding.
  • Dough proof: approx. 10 minutes.
  • Divide and round up and place dough pieces on baking sheets.
  • Final proof: approx. 70 minutes.
  • Bake: approx. 10 minutes at 260°C.
