Ingredients

  • 7000 g - 70% Flour
  • 3000 g - 30% Vitason Multi 10
  • 300 g - 3% Fresh Yeast
  • 150 g - 1,5% Salt
  • 5800 g - 58% Water approx.

Decoration:

  • mixture of seeds

Working method

  • Mix all ingredients into a smooth and well developed dough
  • Dough temperature: approx. 27°C
  • Scale: Dough pieces of approx. 500 grams and rounding
  • Dough proof: Approx. 45 minutes
  • Mould as a long loaf. Place the dough pieces on with rice flour prepared inserters or baking sheets
  • Final proof: Approx. 60 minutes
  • Baking: approx. 35 minuten at 230ºC
