Dark Sunflower Toast Bread - Sonplus Bruin (Brown) and CreationS Dark Malt

Ingredients

  • 7500 g - 75% Wholemeal
  • 2500 g - 25% CreationS Dark Malt
  • 1500 g - 15% Sunflower Seeds
  • 300 g - 3% Sonplus Bruin (Brown)
  • 150 g - 1.5% Salt
  • 6300 g - 63% Water approx.

Decoration:

  • 1000 g - 10% Sunflower Seeds

Working method

  • Mix all ingredients into a smooth and well developed dough
  • Dough temperature: approx. 27ºC
  • Scale: Dough pieces approx. 815 grams and rounding
  • Dough proof: Approx. 40 minutes
  • Mould as a long loaf. Decorate with sunflower seeds and place the doegh pieces into baking tins
  • Final proof: Approx. 65 minutes
  • With lid approx. 40 minutes at 235ºC
