Ingredients

  • 7500 g - 75% Flour
  • 2500 g - 25% CreationS Maize
  • 150 g - 1.5% Salt
  • 5600 g - 56% Water approx.

Decoration:

  • 500 g - 5% Maize Flour

Working method

  • Mix all ingredients into a smooth and well developed dough
  • Dough temperature: approx. 26ºC
  • Scale: Dough pieces approx. 450 grams and rounding
  • Dough proof: Approx. 40 minutes
  • Mould as a short loaf Decorate with maize flour and place the dough pieces on a with rice flour prepared inserter or baking sheets
  • Final proof: Approx. 65 minutes
  • Just before baking incise as desired
  • Baking: Approx. 35 minutes at 230ºC with steam
