Flour 25% 2500 g
Wholemeal 25% 2500 g
Vitason Multigranen (multigrain) 50% » 50% 5000 g
Fresh Yeast 2% 200 g
Water approx. 54% 5400 g
Sesame Seeds 10% 1000 g
Sunflower Seeds 10% 1000 g
Working method
Kneading Mix all ingredients into a smooth and well developed dough
Dough temperature Approx. 26°C
Scale Dough pieces approx. 800 grams and rounding
Dough proof Approx. 50 minutes
Moulding Mould as a long loaf Decorate with a mixture of sunflower and sesame seeds and place the dough pieces into toast baking tins
Final proof Approx. 60 minutes (3/4 proofing time)
Processing Just before baking place the lids on the baking tins
Baking Approx. 35 minutes at 220°C
