Dark Multigrain Tin Bread - Vitason Donker Meergranen (multigrain dark)

Ingredients

  • 5000 g - 50% Flour
  • 5000 g - 50% Vitason Donker Meergranen (multigrain dark) 50%
  • 5500 g - 55% Water approx.

Decoration:

  • 1750 g - 17% Mais Grids
  • 750 g - 7% Poppy Seeds

Working method

  • Mix all ingredients into a smooth and well developed dough
  • Dough temperature: approx. 26ºC
  • Scale: Dough pieces approx. 850 grams and rounding
  • Dough proof: Approx. 40 minutes
  • Mould as a long loaf Decorate with a mixture of mais grids and poppy seeds and place the dough pieces into baking tins
  • Incise just before baking if desired
  • Final proof: Approx. 70 minutes
  • Baking: Approx. 40 minutes at 230ºC with steam
| Mini sandwiches: weigh about 900 grams for 30 pieces. Bake 18 minutes instead of 20 minutes
