Extra Dark Sunflower Tin Bread

Ingredients

  • 6000 g - 60% Wholemeal
  • 4000 g - 40% CreationS Dark Malt
  • 300 g - 3% Proson Bruin Royal (brown)
  • 150 g -1.5% Salt
  • 6000 g - 60% Water approx.

Decoration::

  • 300 g - 3% Sunflower Seeds

Filling::

  • 2000 g - 20% Burnished Sunflower Seeds

Working method

  • Mix all ingredients into a smooth and well developed dough After kneading directly mix filling in
  • Dough temperature: approx. 26ºC
  • Scale: Dough pieces approx. 900 grams and rounding
  • Dough proof: Approx. 35 minutes
  • Mould as a long loaf. Decorate with Sunflower seeds an place the dough pieces into baking tins
  • Just before baking incise as desired
  • Final proof: Approx. 65 minutes
  • Baking: Approx. 40 minutes at 240ºC with steam
