Mediterranean Toast Bread

Ingredients

  • 5000 g - 50% Flour
  • 5000 g - 50% Vitason Méditerranée 50%
  • 5700 g - 57 % Water approx.

Working method

  • Knead all ingredients into a smooth and well developed dough
  • Dough temperature: approx. 27ºC
  • Scale: Dough pieces approx. 900 gram and rounding
  • Dough proof: Approx. 40 minutes
  • Final proof: Approx. 65 minutes
  • Just before baking cover the tin. Approx. 30-35 minutes at 230ºC
  • Mould as a long loaf. Place the dough pieces into casino baking tins
If necesarry add savory filling such as olives, dried tomato, mozzarella, etc
