Ingredients

  • 7500 g - 75% Flour (Type 550)
  • 2500 g - 25% Sonmix Vitalplus
  • 150 g - 1.5% Salt
  • 5600 g - 56% Water approx.

Working method

  • Mix all ingredients into a smooth and well developed dough
  • Dough temperature: approx. 26°C
  • Scale: Dough pieces approx. 600 grams
  • Mould loosly as a round loaf Decorate with a mixture of sesame seeds and Vitason Volfit and place the dough pieces on with rice flour prepared inserter
  • Baking: Approx. 50 minutes at 220°C with steam Open steam slide in time
  • Bulk proof: Approx. 15 minutes
