Sponge Cake (Sonnique Optima Sponge)

Ingredients

  • 1000 g Sonnique Optima Sponge 100%
  • 900 g Eggs 90%
  • 100 g Water 10%

Working method

  • First mix all ingredients together at low speed for 1 minute. Then mix approx. 10 minutes at high speed. Specific gravity: approx. 310 g/l
  • Scale 400 grams of batter into baking tin approx. Ø 28 cm (4 pieces)
  • Baking: approx. 25 - 30 minutes at 180 - 190ºC
