Ingredients

  • 10000 g - 100% Flour
  • 300 g - 3% Proson Wit Prestige (white)
  • 300 g - 3% Fresh Yeast
  • 200 g - 2% Salt
  • 5200-5600 g - 52-56% Water approx.

Working method

  • Mix all ingredients into a smooth and well developed dough
  • Dough temperature: approx. 14-18ºC
  • Scale: approx. 500 grams for 4 pieces
  • Dough proof: Approx. 10 minutes
  • Mould as toast loaf
  • Final proof: Approx. 50-70 minutes
  • Baking: approx. 35-40 minutes at 195-210ºC
