Wholemeal Fruit Bread - Proson Vruchten Citrus (fruit citrus) and Proson Volkoren (wholemeal)
Ingredients
- 10000 g - 100% Wholemeal flour
 - 1000 g - 10% Proson Vruchten Citrus (fruit citrus)
 - 500 g - 5% Proson Volkoren (wholemeal)
 - 800 g - 8% Fresh Yeast
 - 200 g - 2% Salt
 - 7000 g - 70% Water
 
Filling:
- 8000 g - 80% Raisins
 - 3000 g - 30% Currants
 
Working method
- Knead all ingredients into a smooth and well developed dough. After kneading mix the filling directly in the dough
 - Dough temperature: approx. 26°C
 - Scale: Dough pieces approx. 950 gram and rounding
 - Dough proof: Approx. 30 minutes
 - Mould as a long loaf. Place the dough pieces into baking tins
 - Final proof: Approx. 65 minutes
 - Baking: approx. 40/45 minutes at 220-230°C
