Dark Multigrain Tin Bread - Vitason Donker Meergranen (multigrain dark)
Ingredients
- 5000 g Flour 50%
- 5000 g Vitason Donker Meergranen (multigrain dark) 50% 50%
- 5500 g Water approx. 55%
Decoration:
- 1750 g Mais Grids 17%
- 750 g Poppy Seeds 7%
Working method
- Mix all ingredients into a smooth and well developed dough
- Dough temperature: approx. 26ºC
- Scale: Dough pieces approx. 850 grams and rounding
- Dough proof: Approx. 40 minutes
- Mould as a long loaf Decorate with a mixture of mais grids and poppy seeds and place the dough pieces into baking tins
- Incise just before baking if desired
- Final proof: Approx. 70 minutes
- Baking: Approx. 40 minutes at 230ºC with steam
| Mini sandwiches: weigh about 900 grams for 30 pieces. Bake 18 minutes instead of 20 minutes
