Ingredients
- 7500 g - 75% Flour
- 2500 g - 25% CreationS Cheese
- 400 g - 4% Fresh Yeast
- 150 g - 1.5% Salt
- 5500 g - 55% Water approx.
Working method
- Mix all ingredients into a smooth and well developed dough
- Dough temperature: approx. 26ºC
- Scale: Dough pieces approx. 450 grams and rounding
- Dough proof: Approx. 15 mintues
- Mould as a small loaf Decorate with chees if desired Place the dough pieces on baking sheets
- Final proof: Approx. 60 minutes
- Baking: approx. 30 minutes at 225ºC with steam
