Ingredients

  • 7500 g - 75% Flour
  • 2500 g - 25% CreationS Cheese
  • 400 g - 4% Fresh Yeast
  • 150 g - 1.5% Salt
  • 5500 g - 55% Water approx.

Working method

  • Mix all ingredients into a smooth and well developed dough
  • Dough temperature: approx. 26ºC
  • Scale: Dough pieces approx. 450 grams and rounding
  • Dough proof: Approx. 15 mintues
  • Mould as a small loaf Decorate with chees if desired Place the dough pieces on baking sheets
  • Final proof: Approx. 60 minutes
  • Baking: approx. 30 minutes at 225ºC with steam
