  • 5000 g - 50% Flour
  • 5000 g - 50% VitaSon Chia Buckwheat
  • 6000 g - 60% Water approx.


  • 250 g - 5% Chiaseeds

Working method

  • Mix all ingredients into a smooth and well developed dough
  • Dough temperature: approx. 27ºC
  • Scale: approx. 720 grams and round up
  • Mould as a long or round loaf, decorate with chiaseeds and place the dough pieces on a with rice flour prepared inserter or baking sheets
  • Final proof: Approx. 60 minutes
  • Baking: Approx. 35 minutes at 230°C with steam
  • Dough proof: Approx. 25 minutes
  • Incise dough pieces just before baking as desired
