    • Mix all ingredients into a smooth and well developed dough
    • Dough temperature: approx. 26ºC
    • Scale: approx. 1700 grams for 30 pieces
    • Dough proof: Approx. 15 mins
    • Final proof: Approx. 70 minutes
    • Baking: Approx. 9 minutes at 260-270ºC
    • Divide, round up and, if desired, decorate and place on baking sheets
