Dark Muesli Buns

Ingredients

  • 5000 g - 50% Flour
  • 5000 g - 50% Vitason Donker Meergranen (multigrain dark) 50%
  • 1000 g - 10% Sonplus Luxe (Luxury)
  • 800 g - 8% Fresh Yeast
  • 5500 g - 55% Water approx.

Filling:

  • 7000 g - 70% Raisins
  • 2000 g - 20% Mix Tropical

Decoration:

  • 1000 g - 10% Sonvlokken

Working method

  • Mix all ingredients into a smooth and well developed dough After kneading directly mix filling in
  • Dough temperature: approx. 26ºC
  • Scale: approx. 2000 grams (30 pieces)
  • Dough proof: Approx. 10 minutes
  • Divide and round up. Decorate with Sonvlokken and place the dough pieces on baking sheets
  • Final proof: Approx. 75 minutes
  • Baking: approx. 10 minutes at 250ºC
For better softness in the baked product, we recommend to wash again delivered raisins/currants and soak them briefly
