Dark Multigrain Bloomer - Vitason Donker Meergranen (multigrain dark)
Ingredients
- 5000 g - 50% Flour
- 5000 g - 50% VITASON DONKER MEERGRANEN (MULTIGRAIN DARK) 50%
- 250 g - 2,5% Gist
- 5500 g - 55% Water approx.
Decoration:
- 1000 g - 10% Sunflower Seeds
Working method
- Mix all ingredients into a smooth and well developed dough
- Dough temperature: approx. 26ºC
- Scale: Dough pieces approx. 450 grams and rounding
- Dough proof: Approx. 35 minutes
- Mould as a short loaf Decorate with Sunflower Seeds and place the dough pieces on an with rice flour prepared inserter or baking sheets
- Incide just before baking as desired
- Final proof: Approx. 65 minutes
- Baking: Approx. 35 minutes at 230ºC with steam
| Creations premixes are to be dosed between 10% and 40%. The higher the dose, the more tender the bread, the richer the filling and the darker the crumb color
