Dark Multigrain Loaf (Belgian)
Ingredients
- 7000 g - 70% Flour
 - 3000 g - 30% Basic Donker Meergranen 35% (multigrain dark)
 - 5500 g - 55% Water approx.
 
Decoration:
- 1750 g - 17% Mais Grids
 - 750 g - 7% Poppy Seeds
 
Working method
- Mix all ingredients into a smooth and well developed dough
 - Dough temperature: approx. 26ºC
 - Scale: Dough pieces approx. 700 grams and rounding
 - Dough proof: Approx. 30 minutes
 - Mould as a loaf Decorate with a mixture of mais grids and poppy seeds and place the dough pieces on with rice flour prepared inserter or baking sheets
 - Incise just before baking as desired
 - Final proof: Approx. 65 minutes
 - Baking: Approx. 35 minutes at 230ºC with steam Open steam slide for the last 15 minutes
