Dark Sunflower Toast Bread - Sonplus Grof Volkoren (Wholemeal)
Ingredients
- 7500 g - 75% Whole wheat Flour
 - 2500 g - 25% Basic Premix DM
 - 150 g - 1.5% Salt
 - 250 g - 2.5% Fresh Yeast
 - 800 g - 8% Sonplus Grof Volkoren (Wholemeal)
 - 1500 g - 15% Sunflower seeds
 - 6300 g - 63% Water Approx.
 
Decoration:
- 1000 g - 10% Sunflower seeds
 
Working method
- Mix all ingredients in to a well developed dough
 - Dough temperature: approx. 27ºC
 - Scale: Dough pieces approx. 815 grams and rounding
 - Dough proof: Approx. 35 minutes
 - Mould as a long loaf Decorate with Sunflower Seeds and place the dough pieces into baking tins
 - Final proof: Approx. 65 minutes
 - Baking: approx. 40 minutes at 235ºC
 - Place the lids on the baking tins
