Dark Sunflower Toast Bread - Vitason Donker Meergranen (multigrain dark)

Ingredients

  • 5000 g - 50% Wholemeal
  • 5000 g - 50% Vitason Donker Meergranen (multigrain dark) 50%
  • 1500 g - 15% Sunflower Seeds
  • 6100 g - 61% Water approx.

Decoration:

  • 1000 g - 10% Sunflower Seeds

Working method

  • Mix all ingredients into a smooth and well developed dough
  • Dough temperature: approx. 27ºC
  • Scale: Dough pieces approx. 815 grams and rounding
  • Dough proof: Approx. 30-40 minutes
  • Mould as a long loaf. Decorate with sunflower seeds and place the dough pieces into baking tins
  • Final proof: Approx. 65 minutes
  • With lid Final proof: Approx.35-40 minutes at 230ºC
