Hamburger Buns - Sonplus Hamburger Concentrate

Ingredients

  • 10000 g - 100% Flour
  • 1000 g - 10% Sugar
  • 500 g - 5% Fresh Yeast
  • 300 g - 3% Sonextra Shortening
  • 175 g -1.75% Sonplus Hamburger Concentrate
  • 150 g - 1.5% Salt
  • 5000 g - 50% Water approx.

Working method

  • Mix all ingredients into a smooth and well developed dough
  • Dough temperature: approx. 27ºC
  • Dividing: Approx. 1800 grams (30 pieces)
  • Dough proof: Approx. 10 minutes
  • Divide and round up Decorate if desired Place the dough pieces on (hamburger) baking sheets After 10 minutes pin flat
  • Final proof: Approx. 80 minutes
  • Baking: approx. 9 minutes at 250ºC
