- 10000 g – 100% Flour (high-protein)
- 1000 g – 10% Sugar
- 500 g – 5% Fresh yeast
- 300 g – 3% Sonextra Shortening
- 50-100 g – 0,5-1% Sonplus Softsilk
- 150 g – 1,5% Salt
- 5000 g – 50% Water approx.
Working method
Working method:
- Mix all ingredients into a smooth and well developped dough.
- Dough temperature approx 27°C.
- Dividing approx. 1800 grams (30 pieces)
- Divide and round up. Decorate if desired. Place dough pieces on (hamburger) baking sheets.
- After 10 minutes pin flat.
- Final proof approx. 80 minutes.
- Baking approx 9 minutes at 250°C.
