Hamburger Buns – Sonplus Soft Silk

Ingredients:

  • 10000 g – 100% Flour (high-protein)
  • 1000 g – 10% Sugar
  • 500 g – 5% Fresh yeast
  • 300 g – 3% Sonextra Shortening
  • 50-100 g – 0,5-1% Sonplus Softsilk
  • 150 g – 1,5% Salt
  • 5000 g – 50% Water approx.

Working method

Working method:

  • Mix all ingredients into a smooth and well developped dough.
  • Dough temperature approx 27°C.
  • Dividing approx. 1800 grams (30 pieces)
  • Divide and round up. Decorate if desired. Place dough pieces on (hamburger) baking sheets.
  • After 10 minutes pin flat.
  • Final proof approx. 80 minutes.
  • Baking approx 9 minutes at 250°C.
