Multi Corn Loaf
Ingredients
- 7000 g - 70% Wholemeal
- 1000 g - 10% Sonplus Grof Volkoren (Wholemeal)
- 300 g - 3% Fresh Yeast
- 150 g - 1.5% Salt
- 5000 g - 50% Water approx.
- 3000 g - 30% Songraanmix (grain mix)
- 3500 g - 35% Water to soak the Granary & Songraanmix
Decoration:
- 500 g - 5% Sonvlokken
Working method
- Soak the Granary & Songraanmix in lukewarm water for approx. 30 minutes
- Mix all ingredients into a smooth and well developed dough
- Dough temperature: approx. 26ºC.
- Dough pieces approx. 1030 grams and rounding
- 1st dough proof approx. 15 minutes, mould after that in point shape
- 2nd dough proof approx. 20 minutes
- Mould as a long loaf
- Decorate with Sonvlokken and place the dough pieces on inserter or baking sheets
- Final proof: Approx.60 minutes
- Baking: Approx. 45 minutes at 240ºC. with steam
