Multi Corn Loaf

Ingredients

  • 7000 g - 70% Wholemeal
  • 1000 g - 10% Sonplus Grof Volkoren (Wholemeal)
  • 300 g - 3% Fresh Yeast
  • 150 g - 1.5% Salt
  • 5000 g - 50% Water approx.
  • 3000 g - 30% Songraanmix (grain mix)
  • 3500 g - 35% Water to soak the Granary & Songraanmix

Decoration:

  • 500 g - 5% Sonvlokken

Working method

  • Soak the Granary & Songraanmix in lukewarm water for approx. 30 minutes
  • Mix all ingredients into a smooth and well developed dough
  • Dough temperature: approx. 26ºC.
  • Dough pieces approx. 1030 grams and rounding
  • 1st dough proof approx. 15 minutes, mould after that in point shape
  • 2nd dough proof approx. 20 minutes
  • Mould as a long loaf
  • Decorate with Sonvlokken and place the dough pieces on inserter or baking sheets
  • Final proof: Approx.60 minutes
  • Baking: Approx. 45 minutes at 240ºC. with steam
